7 Recipes Celebrating Cinco De Mayo

Tomorrow is Cinco De Mayo! Or perhaps you might know it better as party day! A day that began as a specific celebration of Mexico’s victory over France in a battle in 1862 has morphed into a more general celebration of Mexican culture and heritage. Per usual, I take this opportunity to celebrate the best way I know — using food. Below are seven of my favorite Mexican/Tex-Mex style recipes that should find a place at your Cinco De Mayo festivities tomorrow:

Margaritas {via epicurious}
Don’t fact check this but I believe it’s against the law of the land to celebrate Cinco De Mayo and not have a margarita, isn’t it? Even on non-celebration days margaritas on the rocks are my cocktails of choice. This recipe has the proportions I use, with the only difference being I use .25oz agave in place of the simple syrup. Not for any other reason than I don’t keep simple syrup stocked at my house, but I do keep agave, so if you are the type to have simple syrup on hand than go ahead and use it!. Pictured here are blood orange margaritas which, if you can still get your hands on blood oranges (I’ve seen them around!) I recommend you make. When I do, I use the juice from 1 orange per drink and skip the sweetener, because I find the juice to be plenty sweet for the drink.

Homemade Tortillas {via mexico in my kitchen}
You know those foods that you always buy at the store and then one day decide to try making at home? And after you do you realize that the store bought version should be given a whole different name, because what you just made tastes so dissimilar from what you buy? That’s store bought flour tortillas vs. homemade flour tortillas. I have no issue with the store bought ones — their fine taste & convenience mean they are still what I eat more often than not — but they are very different from homemade tortillas. Once you make these you will see what I mean; the homemade versions have a much richer flavor with completely different (chewy! but still flaky!) texture. Because they are a bit of a process, a holiday like tomorrow is the perfect reason to make them.

Guacamole {via all recipes}
These days guacamole seems to be an everywhere and an everyday snack. Even so, much like the trouble you’ll run into if you try to celebrate tomorrow without a margarita, it seems very much illegal to not have this dip on Cinco De Mayo. There are so many different recipes for guac and this is a dish that is just asking to be altered to your personal tastes, but why don’t we go back to the roots tomorrow and make a classic guacamole. Forgoing all the additions that can be thrown into it, this recipe has just the essentials and is simply delicious.

Enchiladas Suizas {via marcela valladolid}
I first saw Marcela make these enchiladas on The Kitchen last year and thought they looked so good I ended up making them for dinner the next day. And then again. And again. And again. Basically what I’m saying is that I think you should make these for dinner tomorrow, and then prepare to make them over and over again. Part of the charm of these enchiladas is that you are making your own salsa verde but I have also made these using really good store bought salsa verde and loved ’em all the same.

Cilantro Lime Rice {via annie’s eats}
Rice is bound to be on the table at any Cinco De Mayo celebration and instead of just serving it plain this is a great (and easy!) way to dress it up a bit. You can follow this recipe exactly and cook dried rice on the stove but if you’re looking to speed things up there’s no reason why you can’t make this dressing and pour it over already cooked rice. I am a huge fan of those frozen brown rice steam-in-the-bags that you can pick up almost anywhere, and using one of those here is the perfect way to save time without losing an flavor.

Chicken, Chili, and Cheese Quesadillas {via food network kitchens}
If the enchiladas above are a little too involved for you, this is a very delicious and much easier alternative. Quesadillas are so versatile that you can customize them almost anyway you’d like. This is a pretty traditional recipe and the chili in here gives them a nice kick. You can cook and shred your own chicken for these but since it requires no special seasoning or preparation this recipe is the ideal place to use a store bought rotisserie chicken. Super quick, easy, and — much like the rice above — no sacrifice of flavor.

Tres Leches Cake {via the pioneer woman}
Can’t end the meal without dessert! This cake is…decadent. It is certainly not something you should be making all the time, which makes it the perfect cake to be making for a holiday. The name of this one is not a hyperbole: there are actually 3 milks in here. The nectar of the God’s aka sweetened condensed milk, it’s thinner cousin evaporated milk, and it’s unapologetically rich older sister heavy cream are poured over this baked cake to give it it’s signature moist aesthetic. You’ll see a homemade whip cream frosting here but I have actually made and served this without the frosting and it worked fine. It’s much less attractive but when you’re going to be cutting and serving it immediately…who cares?
