I’m not sure what it is, but there’s just something about summertime that makes me want to bake. Maybe it’s the illusion that I have more free time or maybe it’s just the extra daylight hours. Whatever it is, summer makes me want to get out my mixers and springform pans and whip up something new every day. Unfortunately, when it gets hot outside, the last thing I want to do is heat up my oven and make something. Fortunately, though, it seems like lately there has been a never-ending parade of no-bake dessert recipes to quell both my sweet tooth and my desire to bake. From cheesecakes to cookies and everything in between, no-bake desserts are the perfect remedy for summer sweets cravings.

Is there anything better than a no-bake Oreo cheesecake? Perhaps only if it’s served as an individual portion in a cupcake wrapper. These Oreo cheesecake cupcakes are almost too pretty to eat, and the taste is to die for. The recipe leaves instructions for decorating, but even just making these sans decorations doesn’t take anything away from them because they taste so good. They are the perfect cure for a sweet tooth or an Oreo or cheesecake craving.

S’mores are practically synonymous with summer. Whether roasting marshmallows over a campfire or in your own oven, s’mores are the quintessential summer dessert. The only thing better than a s’more might be a no-bake s’more, which is why this recipe is absolutely perfect for s’mores lovers who don’t have access to a campfire. Technically there is a little baking in this recipe if you don’t have a chef’s blowtorch to melt the marshmallow fluff, but turning on the broiler for just a moment won’t heat up your entire house, and it’s definitely worth it. This pie is incredibly easy to make and the perfect cure for a s’mores craving without having to head to the great outdoors.

I could have made an entire list just of no-bake cheesecake recipes, but I restrained myself, somehow. This Nutella Oreo cheesecake recipe combines two flavors that were practically made for each other. One of the reasons this recipe is a favorite of mine is because it lets both treats shine on their own, together. Instead of mixing the two together, which would still be absolutely delicious, the Oreos and the Nutella get their own layers, allowing for a unique taste and textural experience in every bite. Though it takes a bit more time since each layer has to set separately, it’s definitely worth it for this cheesecake.

I call recipes like these “cheat truffles” but really, it can be hard for people to tell the difference and they’re incredibly easy to make and just as tasty. All the best parts of a tiramisu are here, but in bite size form. Usually these kind of truffles use cream cheese as a binding agent, but mascarpone cheese is an essential part of a tiramisu and thankfully works just as well. These are a snap to whip up and simple to decorate, and I guarantee they’ll be a crowd pleaser.
Peanut Butter Chocolate No-Bake Cookies {via food network kitchen}
There are so many great no-bake peanut butter dessert recipes, but these cookies really take the cake, so to speak. The oats add some needed texture, and using chunky peanut butter instead of smooth would add even more crunch, if that’s what you’re into. These are incredibly simple to make, and the clean up is also minimal. They are a great solution for a peanut butter and chocolate craving.
Though baking without an oven almost doesn’t seem like baking, these no-bake desserts are perfect for those who love to bake, just not on a hot summer’s day. These recipes are perfect for any occasion, and yet so simple to make. There is no shortage of no-bake recipes online, but these are some of the tastiest desserts I’ve discovered. In fact, I plan on making some this weekend to celebrate The Hudsucker’s 4th Anniversary!
